The chuck roast is famous for being a tender, juicy and very flavorful cut of meat. This as a result of it being naturally marbled with just the right amount of fat. As a roast, it is very difficult for it to dry, but rather it will fall apart if over cooked.
In store you'll find cleaned pieces of eye-round, which have had their fat trimmed off, this because coming from the round, this cut’s insides can be extremely lean and therefore people use it in beef stews. But in our opinion, it is best enjoyed roasted, or smoked, as the muscle’s “thread-like” texture make it easy to shred and when slow cooked it falls apart on its own. If you’re planning to smoke it or roast it like we mentioned remember to ask for it with it’s “fat-cap” still on, for flavor.
